Die Penne Mezzane Lisce gehören zur Familie der Penne Lisce und unterscheiden sich aufgrund ihres etwas kleineren Durchmessers von letzteren. Die fehlenden Rillen werden durch eine überraschende Weichheit ausgeglichen, die dem Gaumen vortreffliche Erlebnisse bereitet. Zart und raffiniert heben sie Aromen, Geschmäcker und Düfte besonders deutlich hervor. Der Ausdruck Penne bezieht sich in der italienischen Sprache auf die Gänsefeder (Penna d'Oca), die früher zum Schreiben benutzt und schräg abgeschnitten wurde, um eine feine Spitze zu erhalten. Die Nudelsorte, die aus einem glatten oder gerillten Teigrohr hergestellt wird und unterschiedlich lang sein kann, weist den charakteristischen diagonalen Schnitt der Schreibfeder auf. Die Penne sind eine der wenigen Nudelsorten mit einem gesicherten Ursprungsdatum: Im Jahr 1865 beantragte und erhielt ein Nudelhersteller aus San Martino d'Albaro (Genua), Giovanni Battista Capurro, tatsächlich das Patent für eine diagonale Schneidemaschine. Das Patent war besonders wichtig, den damit konnte frische Pasta in Form einer Schreibfeder zugeschnitten werden, ohne dass der Teig zerdrückt wurde. Das Format war variabel zwischen 3 und 5 cm (Mezze Penne oder Penne). Im Dokument, das im Archivio Centrale dello Stato di Roma (Zentralarchiv des Staates Rom) aufbewahrt wird, ist zu lesen: "Bis heute war es nur mit den Scheren in der Hand möglich einen diagonalen Schnitt zu erhalten. Diese Methode war nicht nur besonders zeitintensiv und aufwendig, sondern führte auch dazu, dass die Schnitte unregelmäßig und die Teige zerdrückt wurden". Die Penne Mezzane Lisce sind ausgezeichnet für die Zubereitung von Nudelgerichten mit Saucen mit Rind- oder Schweinefleisch geeignet. Sie passen jedoch auch hervorragend zu Saucen mit Gemüse wie Melanzani, Paprika, Zucchini und Artischocken oder zu originelleren Rezepten wie etwa mit Lachs und Wodka.
